Red Beans and Rice Recipe

1 lb bag red beans
1/2 diced onion
1 lb smoked sausage, cut diagonally into 1/2" slices
1 tbsp Cavender's All Purpose Greek seasoning
1 tsp Louisiana hot sauce (I prefer Louisiana brand, but any will do...this isn't enough to make the dish hot)
1/2 tsp salt
1/2 tsp pepper
2 cups white rice
1 tbsp butter or margarine
1/4 tsp salt

Rinse beans very well, pick out any stones or discolored beans. Cover with 3" water. Soak beans overnight. (optional method, cover with 3" water, bring to boil, cover and remove from heat, let sit for one hour. Drain.)

Cover beans with 2" water, bring to boil. Add onions, 1/2 tsp salt, pepper, cover, simmer for 1 hour.

In another pan....

Add 4 cups water, rice, butter 1/4 tsp salt to medium sized saucepan. Bring to boil, then reduce to low heat. Stir well, be sure to scrape bottom of pan. Cover, let steam for 20 min. Check to ensure all liquid is absorbed, if not, let steam for a few more minutes. Remove from heat, fluff with fork, cover and let sit for at least 10 minutes...the longer the better.

Check to see if beans are soft. If not, let simmer until soft. If needed, add water until beans are covered by 1". Bring to rolling boil, add sausage, Cavender's, hot sauce. Stir regularly until liquid has thickened, until it is no longer standing above beans. (be careful not to scorch beans...if you do, throw them away, they are ruined)

Serve over the rice. Add hot sauce if you like it hot.
